Stallings spent 39 years in coaching after his playing days with Texas A&M, where he was named First-Team All-Southwest Conference in 1955 with the Aggies. He had two stints as a college football head coach, coaching his alma mater from 1965 to 1971, where he won the Southwest Conference in 1967. Stallings became the Alabama head coach in 1990 and led the Crimson Tide to a national championship, the 12th in program history, during the 1992 season. Stallings and the Crimson Tide won the 1993 Sugar Bowl against the Miami Hurricanes after defeating the Florida Gators in the inaugural SEC championship in December 1992. Stallings led Alabama to a perfect 13-0 season en route to the championship victory over Miami, with the Tide being named consensus national champions by the Associated Press, the Football Writers' Association of America, the National Football Foundation, CNN, and the United Press International.

During his tenure with the Crimson Tide, Stallings won the SEC West from 1992 to 1994, and again in 1996. He earned numerous coach of the year awards:

SWC Coach of the Year (1967)
AFCA Coach of the Year (1992)
Paul "Bear" Bryant Award (1992)
Walter Camp Coach of the Year (1992)
George Munger Award (1992)
SEC Coach of the Year (1992, 1994)

Stallings accumulated a 97-61-2 record as a college head coach and was inducted into the College Football Hall of Fame as a member of the 2010 Hall of Fame Class.
